Dry fruits shrikhand & Mango Shrikhand

Shrikhand is a dessert based on fresh thick hung curd.I don't know much history of shrikhand,I learnt this delicious summer special healthy dessert from my Gujarati friend.She told me that people of Maharashtra also made this recipe.It is mainly a thick sweet curd.To make it more delicious and flavourful  some dry fruits and small cardamom powder are used.Here I have shared two types of shrikhand recipes.To make it more flavourful you can add few threads of saffron,actually my family members do not like saffron flavour in curd,so I have not added saffron in shrikhand.You can add,if you wish to add it.


These are Dry fruits shrikhand & Mango Shrikhand.Mango shrikhand is also known as aamshrikhand.It is a extended version of traditional dry fruits shrikhand recipe.In these recipes I have used home made fresh curd.Always prefer home made curd,if possible,otherwise use greek yoghurt.I always prefer to use seasonal fresh mango to make mango shrikhand.If it is not possible,you can use store bought mango pulp to make this recipe.

Lets start the recipe

Ingredients of Dry fruits shrikhand



  • Fresh curd  1bowl(small)
  • Powdered sugar  2tbsp or to taste
  • Small cardamom powder 1/2tsp
  • Pistachois 15-20pices
  • Raisins 15-20pices
  • Chopped almonds 15-20 pieces
  • Chopped cashew nuts 15-20 pieces

Method

Step1
Take a bowl and place a sieve on it.Make sure there is sufficient space for water to accumulate at the bottom of the bowl without touching the sieve.This step is very necessary to make hung curd.

Step2
Place a cheese cloth or well washed and cleaned handkerchief.Pour home made fresh thick curd.

Step3
Refrigerate it overnight.

Step4
The next day you will see water separated from curd and hung curd is ready.


Step5
Whisk until you get soft and creamy curd.


Step6
Further add small cardamom powder,powdered sugar,pistachois,raisins,chopped almonds and chopped cashew nuts.

Step7
Give it a good mix.Dry fruits shrikhand is ready to serve.


Mango shrikhand


Ingredients

Above all ingredients+1/2 cup fresh mango puree.

Method
Above all steps of dry fruits shrikhand and one more step is given below.

Last step
Add fresh mango puree in dry fruits shrikhand and give it a nice mix.Your mango shrikhand or aamshrikhand is ready to serve.Serve it chilled.

Vegetable Hakka Noodles

Vegetable Hakka Noodles is a street food.It is a Indo Chinese cuisine .Hakka cuisine is actually an indian adaptation of original taiwanese hakka dishes. it has evolved to be one of the popular indian street foods. Hakka noodles are spicer as compared to other noodle recipe.One of the favorite street foods of all.This Chinese recipe requires less time to prepare,if you have already boiled noddles.All Chinese foods are cooked  on very high flame in wok as vegetable fried rice and all noodles recipes.Lets start the recipe


Ingredients of Hakka Noodles


  • Hakka Noodles 200gm
  • Water 1 lit or enough water
  • Oil  1tsp+3-4tbsp
  • Garlic chopped 1tbsp
  • Ginger chopped 1/2 tbsp
  • Green chilly 1-2
  • Onion  1&haif
  • Spring onion(white part)1-2
  • Carrot(thinly sliced)2
  • Capsicum(thinly sliced)1-2
  • Cabbage (shredded) 1cup
  • Chilli sauce 2tbsp
  • Soya sauce 1tbsp
  • Vinegar 1tsp
  • Black pepper 1/4tsp
  • Salt to taste
  • Spring onion(green part)for garnish 1/4cup


Method

Step1
Boil 1 liter or enough water in a wide vessel.Add salt and oil.Mix it well.Allow the water to boil.

Step2
Add noodles in boiling water.Boil for 3-4 minutes on medium flame.

Step3
Noodles should be 90%cooked not fully cooked.It should be cruncy after boiling.After boiling for 3-4 minutes drain water.



Step4
Pour 4-5 glass of cold water.Through this method, the cooking process of noodles would be stopped.You may keep noodles in cold water.Sprinkle oil over the noodles .So it does not stick together.


Step5
In a pan or wok on high flame,add oil.Let the oil heat up .


Step6
Add chopped onion and spring onion white part.Saute for few minutes.Add choped garlic and chopped ginger.Saute for two minutes until raw smell goes off.Add sliced green chilly and again saute for few seconds.

Step7.Add thinly sliced carrot,capsicum,shredded cabbage.Saute for 2-3 minutes on high flame.

Step7
its time to add spices and sauces.Add salt,black pepper followed by chilly sauce,soya sauce,white vinegar.You may add ajinomoto if you wish to.Give it a nice mix.At this time add green part of spring onion.It is very difficult to stir the noodles because while stirring mostly noodles scatter.To avoid this,It is strongly recommended  to use two sapatulas to give a nice stirring.Do not over mix as the noodles will break.





Garnish hakka noodles with green part of spring onion and serve hot.

Mawa Malpua

Malpua is a pan cake,famous in Rajasthan,Bihar,Bengal and Odisha.There are many varieties of malpua.However each region has a different version of making malpua.In many parts fruits such as bananas,apples are also used to make malpua.Rabri malpua is also a delicious variety of malpua.Usually malpua is made by using refined flour,milk,mawa,sugar and for flavour small cardamom and fennel seeds.It does't mean that you can't use wheat flour or semolina in place of refined flour.It is a instant form of malpua recipe.Its very simple,delicious and easy to make dessert.Malpua is a festive delight, mostly made on the eve of holi.




Lets start the recipe

Ingredients of Malpua


  • Refined flour  -2cups
  • Mawa(khoya) -1cup
  • Milk                3 and1/2 cup
  • water                2 cups
  • Sugar                2 cups
  • Baking powder  1/8tsp
  • Small cardamom powder 1/2 cups
  • Few saffron strands


Method

Step1

Take a blender jar and add grated mawa,refined flour,baking powder and milk.Add milk in batches.Do not add milk in one go.Gradually add milk and blend to make thick flowing consistency batter.At this time you may add 1/2 tsp fennel seeds if you wish to add it.Otherwise you can skip it.

Step2
After making thick flowing consistency batter,transfer it into a bowl from blender jar and leave it for 15-20min.Usually malpua batter is rested for few hours to enhance the flavour and texture but here I am sharing instant malpua recipe,so leave it for 15-20 min.

Step3
In the meantime,prepare sugar syrup until the bater is rested.For this,take a sauce pan and add water,sugar,few saffron strands and cardamom powder.Boil on medium flame for 5-6 min.No need to make one string or two string consistency syrup.we need just sticky syrup.Keep it aside.

Step4
Heat oil or pure ghee to fry malpuas.Pour the batter with the help of ladle into hot oil/ghee and fry on low flame until they turn golden in colour.Filp and fry on both sides.One batch takes 5-6 min on low flame.Squeeze and remove excess oil.


Step5
After frying the malpuas soak in sugar syrup for 1-2 min and take it out after soaking.Garnish with some nuts.

Enjoy malpua also in rainy days.

IRANI CHAI

Hello friends,who read my blog.Today I am going to share with you a very unique kind of tea.Delicious and strong in taste,a hot beverage...IRANI CHAI.This unique & rich tea was brought by Persian as described in history long back when they migrated to India.This delicious tea is also known as Hyderabadi dum chai.As you all know Hyderabad is very famous for IT and Hyderabadi dum biryani.It is also famous for Irani chai.Irani chai is served with osmania biscuits.



It is prepared with decoction of tea powder,thick reduced full fat buffalo milk,mawa or condensed milk and sugar.For flavour cinnamon ,small green cardamom  are added.You may add other ingredients as star anise,pepper,big cardamom if you wish to add these ingredients.All ingredients are rich and strong.This Irani chai is very strong,thick and creamy tea.Try preparing irani tea at your home,if you long to taste it.

Ingredients for Irani chai


  • Water 4 cups(as per you requirement)
  • Milk 4 cups(full fat buffalo milk)
  • Mawa 3/4 cup
  • Small cardamom powder 1/4 tsp
  • Cinnamon powder 1/4 tsp
  • Tea leaves 3tbsp(small and big)
  • Sugar 3-4 tbsp or to taste

Follow these steps to make Irani chai at home

Step1
In a tea pan add 4 cups of water and bring the water to boil.After that add small cardamom powder or pod,cinnamon powder or stick,tea leaves.Stir two three times.




Step2
Keep the flame to low and cover with alminium foil ,so that steam does not escape too much.As you leave it for long time,You get a strong decoction.Boil for 10 min on low flame.Actually tea decoction is made in pressure.

Step3
While our tea decoction is getting ready,lets prepare milk for Irani chai.In a another pan add 4 cups of full fat milk(prefer buffalo milk).Bring the milk to boil,keep an eye on both pans.Stir continuously,add mawa and stir with whisk.Add sugar.Switch off the flame,when milk reduces to half.You will get thick creamy reduced milk.

Step4
Lets check the tea pan,open the lid and remove alminium foil,and filter the decoction.

Step5
Same way pour the milk in any vessel.

Step6
Now assemble milk and tea decoction for Irani chai.Pour 1/2 cup of kava or tea decoction in a serving cup and 1/2 cup of thick reduced milk.

Your Irani tea or Hyderabadi dum chai is ready to serve.Serve this strong and rich flavoured tea with osmania biscuits.Do not make this tea daily as it is very strong.

Nimbu Masala Soda

Nimbu Masala soda is a  very tasty and healthy summer special drink.It is a common street food beverage served in every corner of India during summer.It is a very healthy and yummy home made cold drink.It takes less time to prepare.It is one of the most popular drinks,liked by everyone.This drink includes fresh mint leaves,ginger,black pepper,roasted cumin powder,chat masala,black salt,lemon juice and sugar.Being a energy drink,It is also helpful to get rid of tiredness in summer.
Whenever I visit to shopping during summer with my family,I never miss this yummy drink by street vendors.Although they have different way of making the nimboo masala soda.
You can adjust the quantity of spices as per your taste.If you like less spicy food, reduce the quantity of spices,as shown in video and written in this post. 


Ingredients for Nimbu Masala Soda

  • Fresh mint leaves handful
  • Ginger 1/4inch
  • Water 2tbsp
  • Lemon juice 2tbsp
  • Sugar 2tbsp
  • Black pepper 1/4tsp
  • Roasted cumin powder 1/4tsp
  • Chat Masala 3/4tsp
  • Black salt 1/4tsp
  • Ice cubes 
  • Mint leaves for garnish
  • Lemon wedges for garnish
  • Soda water 1 glass
Method
Step1
In a blender jar, add handful mint leaves,ginger and water.
Step2
Grind to fine paste.
Step3
In a serving glass,strain the mint ginger paste.
Step4
Add lemon juice,sugar,black pepper,roasted cumin powder,chat masala,black salt and ice cubes.
Step5
Cover with any lid and shake well until all spices are mixed.
Step6
Add few mint leaves and lemon wedges for garnish.
Step7
Now add chilled soda water in a serving glass and stir with spoon for few seconds.
Your Nimbu Masala Soda is ready to serve.
