IRANI CHAI

Hello friends,who read my blog.Today I am going to share with you a very unique kind of tea.Delicious and strong in taste,a hot beverage...IRANI CHAI.This unique & rich tea was brought by Persian as described in history long back when they migrated to India.This delicious tea is also known as Hyderabadi dum chai.As you all know Hyderabad is very famous for IT and Hyderabadi dum biryani.It is also famous for Irani chai.Irani chai is served with osmania biscuits.



It is prepared with decoction of tea powder,thick reduced full fat buffalo milk,mawa or condensed milk and sugar.For flavour cinnamon ,small green cardamom  are added.You may add other ingredients as star anise,pepper,big cardamom if you wish to add these ingredients.All ingredients are rich and strong.This Irani chai is very strong,thick and creamy tea.Try preparing irani tea at your home,if you long to taste it.

Ingredients for Irani chai


  • Water 4 cups(as per you requirement)
  • Milk 4 cups(full fat buffalo milk)
  • Mawa 3/4 cup
  • Small cardamom powder 1/4 tsp
  • Cinnamon powder 1/4 tsp
  • Tea leaves 3tbsp(small and big)
  • Sugar 3-4 tbsp or to taste

Follow these steps to make Irani chai at home

Step1
In a tea pan add 4 cups of water and bring the water to boil.After that add small cardamom powder or pod,cinnamon powder or stick,tea leaves.Stir two three times.




Step2
Keep the flame to low and cover with alminium foil ,so that steam does not escape too much.As you leave it for long time,You get a strong decoction.Boil for 10 min on low flame.Actually tea decoction is made in pressure.

Step3
While our tea decoction is getting ready,lets prepare milk for Irani chai.In a another pan add 4 cups of full fat milk(prefer buffalo milk).Bring the milk to boil,keep an eye on both pans.Stir continuously,add mawa and stir with whisk.Add sugar.Switch off the flame,when milk reduces to half.You will get thick creamy reduced milk.

Step4
Lets check the tea pan,open the lid and remove alminium foil,and filter the decoction.

Step5
Same way pour the milk in any vessel.

Step6
Now assemble milk and tea decoction for Irani chai.Pour 1/2 cup of kava or tea decoction in a serving cup and 1/2 cup of thick reduced milk.

Your Irani tea or Hyderabadi dum chai is ready to serve.Serve this strong and rich flavoured tea with osmania biscuits.Do not make this tea daily as it is very strong.
