Vegetable Hakka Noodles

Vegetable Hakka Noodles is a street food.It is a Indo Chinese cuisine .Hakka cuisine is actually an indian adaptation of original taiwanese hakka dishes. it has evolved to be one of the popular indian street foods. Hakka noodles are spicer as compared to other noodle recipe.One of the favorite street foods of all.This Chinese recipe requires less time to prepare,if you have already boiled noddles.All Chinese foods are cooked  on very high flame in wok as vegetable fried rice and all noodles recipes.Lets start the recipe


Ingredients of Hakka Noodles


  • Hakka Noodles 200gm
  • Water 1 lit or enough water
  • Oil  1tsp+3-4tbsp
  • Garlic chopped 1tbsp
  • Ginger chopped 1/2 tbsp
  • Green chilly 1-2
  • Onion  1&haif
  • Spring onion(white part)1-2
  • Carrot(thinly sliced)2
  • Capsicum(thinly sliced)1-2
  • Cabbage (shredded) 1cup
  • Chilli sauce 2tbsp
  • Soya sauce 1tbsp
  • Vinegar 1tsp
  • Black pepper 1/4tsp
  • Salt to taste
  • Spring onion(green part)for garnish 1/4cup


Method

Step1
Boil 1 liter or enough water in a wide vessel.Add salt and oil.Mix it well.Allow the water to boil.

Step2
Add noodles in boiling water.Boil for 3-4 minutes on medium flame.

Step3
Noodles should be 90%cooked not fully cooked.It should be cruncy after boiling.After boiling for 3-4 minutes drain water.



Step4
Pour 4-5 glass of cold water.Through this method, the cooking process of noodles would be stopped.You may keep noodles in cold water.Sprinkle oil over the noodles .So it does not stick together.


Step5
In a pan or wok on high flame,add oil.Let the oil heat up .


Step6
Add chopped onion and spring onion white part.Saute for few minutes.Add choped garlic and chopped ginger.Saute for two minutes until raw smell goes off.Add sliced green chilly and again saute for few seconds.

Step7.Add thinly sliced carrot,capsicum,shredded cabbage.Saute for 2-3 minutes on high flame.

Step7
its time to add spices and sauces.Add salt,black pepper followed by chilly sauce,soya sauce,white vinegar.You may add ajinomoto if you wish to.Give it a nice mix.At this time add green part of spring onion.It is very difficult to stir the noodles because while stirring mostly noodles scatter.To avoid this,It is strongly recommended  to use two sapatulas to give a nice stirring.Do not over mix as the noodles will break.





Garnish hakka noodles with green part of spring onion and serve hot.
