Malpua is a pan cake,famous in Rajasthan,Bihar,Bengal and Odisha.There are many varieties of malpua.However each region has a different version of making malpua.In many parts fruits such as bananas,apples are also used to make malpua.Rabri malpua is also a delicious variety of malpua.Usually malpua is made by using refined flour,milk,mawa,sugar and for flavour small cardamom and fennel seeds.It does't mean that you can't use wheat flour or semolina in place of refined flour.It is a instant form of malpua recipe.Its very simple,delicious and easy to make dessert.Malpua is a festive delight, mostly made on the eve of holi.

Method
Step1
Take a blender jar and add grated mawa,refined flour,baking powder and milk.Add milk in batches.Do not add milk in one go.Gradually add milk and blend to make thick flowing consistency batter.At this time you may add 1/2 tsp fennel seeds if you wish to add it.Otherwise you can skip it.
Step2
After making thick flowing consistency batter,transfer it into a bowl from blender jar and leave it for 15-20min.Usually malpua batter is rested for few hours to enhance the flavour and texture but here I am sharing instant malpua recipe,so leave it for 15-20 min.
Step3
In the meantime,prepare sugar syrup until the bater is rested.For this,take a sauce pan and add water,sugar,few saffron strands and cardamom powder.Boil on medium flame for 5-6 min.No need to make one string or two string consistency syrup.we need just sticky syrup.Keep it aside.
Step4
Heat oil or pure ghee to fry malpuas.Pour the batter with the help of ladle into hot oil/ghee and fry on low flame until they turn golden in colour.Filp and fry on both sides.One batch takes 5-6 min on low flame.Squeeze and remove excess oil.
Step5
After frying the malpuas soak in sugar syrup for 1-2 min and take it out after soaking.Garnish with some nuts.
Enjoy malpua also in rainy days.

- Small cardamom powder 1/2 cups
