Rava Idli is a famous south Indian recipe. Traditionally idli recipe is prepared with rice and urad dal,but now a days coarse semolina is used to make idli recipe.Its taste is even better compared to rice idli.It is a steamed recipe.To make it more tasty,we add many ingredients.Although vegetables and many more ingredients which are used in this recipe are optional,but these ingredients enhance the taste of rava idli.You can make idli with only rava,curd and baking powder,salt and water.This idli would be simple rava idli.To make it more flavorful and tasty we use many ingredients.
Method
Step1
In a pan or kadahi, add 1tbsp oil.Let the oil heat up.After heating the oil, add chana dal,udad dal,dried red chilly,curry leaves along with asafotida.Saute for 1 minutes.After stirring,add cumin seeds,mustard seeds.Saute for few minutes.Do not over roast all these ingredients.Add broken cashew nuts and saute till golden brown.After that add semolina or suji and saute for 4-5 minutes on medium flame.Do not change the colour of suji.Keep it aside
Step2
Immediately transfer the mixture into a bowl and allow the mixture to cool completely.Further add salt,curd and mix it well.Add water to adjust the consistency.It should be a little thick.Again mix it well.You can watch my video,If you have any problem.Cover the batter and leave it for 25-30 minutes.
Step3
In the meantime,grease the idli stand with refined oil,as idlis are made by using idli mould or stand.
Step4
Now our batter is fermented.it is time to add vegetables as grated carrot,grated ginger,soft peas.You can add more vegetables of your choice like beans.To add vegetables in this recipe is optional but these vegetables enhance the taste of idli.
Step5
Put pressure cooker on flame and add 2 glasses of water.Keep idli stand at the bottom of the cooker.Remove gasket and whistle.
Step6
Add water in batter to adjust the consistency.As semolina tends to absorb water.It should be a little thick.Then add 1tsp baking powder or fruit salt(eno)without any flavour.Mix it well.Pour this batter into the idli stand.Keep it on the stand in pressure cooker.Steam for 10-12 minutes on low flame.
Step7
After 10-12 minutes,open the pressure cooker and check with knife.If it comes out clean,your idlis are ready to eat.
Sereve this yummy recipe with coconut chutney or red chutney and enjoy your day.
