Tomato pulav is simple and yummy recipe of all age groups.It is very healthy recipe as many vegetables which are used to make tomato pulav,enhance the taste of rice.To make all types of rice,always prefer good quality long grained basmati rice.You may choose any types of vegetables of your choice.It is up to you,which vegetables you like most.
Here is the list of ingredients of making tomato pulav.
- Basmati- rice 1cup.
- Water to boil the rice- 5 cups.
- Bay leaves -2
- Small cardamom -2
- Big cardamom-1
- Black pepper 3-4
- Cloves-2
- Cinnamon stick-1/2inch.
- Cumin seeds 1/2tsp
- Salt to taste.
- Chopped tomatoes 3-4.
- Beans-1/4cup
- Potatoes-1/4cup
- Carrot-1/4cup
- Cauliflower-1/4cup
- Peas-1/4cup
- Cashew nuts 10-12
- Mint leaves 12-15
- Curry leaves 4-5
- Chopped coriander leaves
- Curd or tomato puree 1/4cup
- Oil 1tbsp for tempering
- Ghee 1tbsp for tempering
- oil 1tsp for applying on cooked rice
- Green chily 1
- Onion 2(chopped)
- Ginger paste 1/2tsp
- Garlic paste 1/2tsp
- Red chili powder 1/4tsp
- Turmeric powder 1/4tsp
- Pav bhaji masala 1tsp.
- Garam masala 1/4tsp
Method

Step1
Clean,wash and soak good quality rice for half an hour.
Step2
Boil 5cups of water.Let the water come to boil,then add bay leaves,cinnamon stick,cloves,big cardamom,small cardamom,black pepper.
Step3
Add salt along with soaked rice.
Step4
Boil the rice for 12-15 minutes.You will get 90% cooked rice.Strain the rice and drain the excess water.
Step5
Apply oil over cooked rice.Keep it aside.
Step6
In a non stick pan, add 1tbsp ghee and 1tbsp oil.
Step7
Add cumin seeds,curry leaves,chopped onion.Stir fry till golden brown.
Step8
Add ginger and garlic paste along with green chili.Stir for few minutes.
Step9
Add salt,red chili powder,turmeric powder and pav bhaji masala.stir it until all spices are cooked.
Step10
Add chopped tomatoes and stir continuously.Add all the vegetables like beans,cauliflower,potatoes,carrots,peas.Mix it well.
Step11
Add 1/2cup curd or tomato ketchup.Do not forget to stir.Cover the lid and cook the vegetables for 8-9 minutes on low medium flame.
Step12
Add cooked rice and mix it well.Add fresh mint leaves,coriander leaves along with cashew nuts.
Step13
Add garam masala.And serve with fresh curd or raita.
