Khaman Dhokla

Khaman Dhokla is a Gujarati recipe.It is a steamed recipe.It is a very healthy recipe.This recipe is made by using many methods.You can make this recipe by using few ingredients,which are easily available in your home.It is also a healthy recipe,due to steaming process.This recipe is a combination of many tastes.Sour taste of curd,sweet taste of sugar make this recipe more yummy.The main ingredients which is used in this recipe is gram flour(besan).Without this ingredient,you can not make this tasty Dhokla.


Ingredients for making Khaman Dhokla.


  • Gram flour(besan) 1cup(200gm)
  • Sour curd 1/2 cup
  • water for making batter 1/2 cup
  • water for sreaming dhokla 1 1/2-2 glass
  • salt to taste
  • Curry leaves 7-8
  • Mustard seeds 1/2tsp
  • Cumin seeds 1/2tsp
  • green chilies 3-4
  • Ginger paste 1/2tsp
  • Oil for making batter 1tsp
  • Oil for tempering 2tsp
  • Fruit salt (eno)without any flavour  1tsp 
  • Sugar 1tbsp for tempering
  • Sugar 1tsp for making batter
  • Lemon juice 2tsp
  • Fresh coriander leaves for garnish
  • Fresh coconut(grated) for garnish
  • Chili flakes for garnish(optional)

Method

Step1
Grease a wide tray or any utensil with refined oil for steaming the dhokla.

Step2
Take a mixing bowl and add sieved gram  flour,add  sour curd and mix it well.

Step3
Add water little by little and adjust the consistency.Your batter should not be watery.It should be a little thick.

Step4
Add sugar,salt and ginger paste.Mix all the ingredients very well.

Step5
Let the batter rest for 15 minutes.After this add fruit salt(eno).This process is very important while making dhokla.You should immediately do this process before steaming the dhokla. Otherwise,your dhokla will not be spongy.

Step6
Pour the batter into the greased tray.

Step7
Its time to steam the dhokla. Before following the step5,boil the water in a wide pan or kadahi.Put stand at the bottom of the pan or kadahi.Place the tray of dhokla batter on it.

Step8 
Put stand at the bottom of the pan or kadahi.Place the tray of dhokla .
Cover the lid and steam for 15-20 minutes.After 15-20 minutes,check the dhokla,if it is steamed by inserting a tooth pick or knife.If it comes out clean,it means that your dhokla is steamed.

Step9
Its time to prepare tempering,for this,take a pan.Add oil in a pan.Add cumin seeds,mustard seeds.Stir for few minutes.When these begin to splutter,add curry leaves,green chillies,stir it well.

Step10
Add water,lemon juice,salt and sugar.Allow the mixture to boil for two minutes.Switch off the gas.Pour the tempering over the steamed dhokla.

Your Khaman Dhokla is ready to serve.Serve this yummy,delicious,and tangy recipe with grated coconut,chilly flakes and fresh coriander leaves.
