Kanda Poha recipe is maharashtrian recipe.Kanda means onion and poha means flattened rice.Although this recipe is the combination of onion and flattened rice yet many other ingredients like peanuts,lemon juice,boiled potato make this recipe tastier.It is very simple and yummy recipe.This recipe does not require too many ingredients.You can make this recipe very easily at your home.The taste of lemon,sugar and salt make this recipe very yummy.This recipe is also healthy recipe,as it is not deep fried recipe.It is simple shallow fried recipe.
So always prefer non stick pan to make this tangy, sweet and salty recipe.Crunchy taste of peanut makes this recipe more delicious.You may increase or decrease the ingredients as per your taste.

Method

Step1
Take one cup of flattened rice and wash with one glass of water.Keep it aside.Do not over wash or soak flattened rice,otherwise it will become soggy.For one glass of flattened rice,you need just one glass or 3/4 glass of water.
Step2
In a non stick pan,add oil.Add peanuts,gently fry for 3-4 minutes on low to medium flame.Take it out and keep it aside.
Step3
Add 2tsp oil.Then add cumin seeds,mustard seeds along with curry leaves.Let them splutter for few seconds.
Step4
Add chopped onion,stir fry for 2-3 minutes.After this add ginger paste,garlic paste.Stir continuously.
Step5
Add turmeric powder,red chilly powder,chat masala,garam masala.Mix all the ingredients very well.
step6
Add washed flattened rice(poha).Mix it well.Stir continuously.Then add fried peanuts.
Step7
Add salt to taste.After this add sugar and mix it well.
Step8
Add boiled potatoes.Mix it well.At last add one lemon juice and mix it well.You may replace lemon juice with one tsp dry mango powder.
Now your Kanda(onion) poha(flattened rice)is ready to serve.
