Carrot Coconut Burfi

Indian people are very fond of making and eating yummy and delicious food items.They make everyday special food items for their families.There is a festival everyday in India.whenever festival comes,people make different types of desserts in their houses.Burfi is also one of them.There are many types of burfi varieties in India,like Milk burfi,Coconut burfi,Apple burfi,Carrot burfi Maida burfi.....Today I will show you how carrot coconut burfi is made at home.

This is very healthy recipe as it includes lots of carrot,desiccated coconut,condensed milk,sugar and dry fruits.Carrots are very healthy for our body due to vitamin A.This vitamin is a good for vision.Sometimes children do not like to eat carrot,so burfi is a good way to fulfill the vitimin A deficiency.


Ingredients for making carrot burfi.


  • Carrot 1Kg
  • Full fat milk  1cup
  • Condensed milk  400gm
  • sugar  200gm
  • Coconut  250gm(1cup)
  • Small cardamom powder  1/2tsp
  • Almond chopped 15
  • Cashew nuts 15
  • Ghee 2tsp
  • Pistacchois 10


Method

Step1

Grease the tray or any wide plate with refined oil for setting burfi.Take 1kg carrots.Wash them.
Step2
Peel off all the carrots and again wash carefully.
Step3
Grate the carrots and keep them aside.
Step4
In a pan or wok add desiccated coconut.Dry roast for two three minutes on low medium flame.Keep it aside.
Step5
In a same wok or pan,add two tsp ghee and allow the ghee to melt.Add grated carrots.Stir for 5-6 minutes.
Step6
Add one cup of milk and stir for few minutes.Cover with lid and cook for 5-6 minutes.
Step7
Open the lid and stir continuously.Add 1/2 tsp of small cardamom powder.Mix it well.
Step8
Add roasted coconut powder.Mix nicely.
Step9
Add sugar and mix it well.Sugar can be increased or decreased as per your choice.
Step10
Add condensed milk.Give it a nice mix.
Step11
Add chopped dry fruits.mix all the ingredients very well.Cook this mixture until it leaves the pan and become like dough.
Step12
After this pour this mixture into a greased tray and let it cool down.Keep the tray in refrigerator for 3-4 hours.
Cut into desired shapes after 3-4 hours.Your Carrot Coconut burfi is ready to serve.
