Vegetable biryani

Vegetable biryani or vegetable dum biryani is a favourite recipe of all vegetarian in winter,as you can buy easily carrot,cauliflower,peas,mashroom in winter to make this yummy pulav.This is very tasty and healthy recipe as the vegetables which are added in this recipe not only make it tasty,but also make it healthy.There are many ways by which you can make the vegetable biryani.some people use pressure cooker to make it fast,but here I have different way of making this recipe.

Ingredients for making veg biryani


  • Rice 1cup.
  • water 4-5 cup.
  • Saffron milk 1cup
  • Bay leaves 3-4
  • Cloves 4-5
  • Black pepper 6-7
  • Small cardamom 2-3
  • Big cardamom 1
  • Cinnamon stick 1/2 inch
  • Onion chopped 2-3
  • Fried onion 2 bowls
  • green chilli 3-4
  • carrot 50gm.
  • Peas 50gm.
  • Capsicum 1
  • Potato 2
  • Beans 50gm
  • Cottage cheese(optional)
  • Ginge&Garlic paste 1tsp
  • Mint&Coriander leaves 2bowl
  • Chili(red)powder1/2tsp
  • Turmeric powder 1/2tsp
  • Biryani masala 1tsp
  • Pure ghee 4tbsp
  • Caraway seeds 1/2tsp
  • Curd 1 bowl
  • salt to taste

Method

Step1
In a bowl,add 1 cup of good quality basmati rice and add enough water to soak the rice for 25-30 minutes.
Step2
Add 4-5 cups of water in a pan or any wide utensil.Put the pan on gas,and boil it.Add hot spices like bay leaves,small cardamom,big cardamom,cloves,black pepper and salt.
Step3
Add soaked and well washed rice in a boiling water and cook for at least 15 minutes without covering lid on medium flame.
Step4
Now your rice is 90% cooked and drain out the water from rice by using strainer.At this step you may remove hot spices that you do not like to eat.You may remove cinnamon stick,bay leaves and big&small cardamom as these hot spices are used only to flavour the rice.
Step5
In a non stick pan or wok add 1tbsp of refined oil and one tbsp of pure ghee.Allow it to heat,add caraway seeds,chopped onion.Stir till golden brown,then add ginger,garlic paste along with green chilli.
Step6
Add salt,red chili powder,turmeric powder,and biryani masala.Mix it well.Do not forget to stir,otherwise your spices would burn.
Step7
Add curd and stir it.Now add all the vegetables of winter or your choice like carrot,beans,cauliflower,potato,peas.Stir all the vegetables for few minutes.Cover the lid and cook for 7-8 minutes on low flame.
Step8
Open the lid and see your vegetables are cooked.Do not over cook.
Step9
This step is very important step than the previous steps.It is time to make layers.Now in a wide heavy bottomed pan or wok add first layer of cooked veggies then make layer of cooked rice on it.After this add saffron contained milk with the help  of  tea spoon,along with few tsp of pure ghee,fried onion and mint and coriander leaves.You can watch the video,if you are feeling some problem as it is very special step of veg biryani. 
Step10
Repeat the same step of making one more layer of cooked vegetables,rice,saffron milk,fried onion,pure ghee and mint and coriander leaves.
Step11
Cover the lid and cook for 20-25 minutes on very low flame.You may give indirect heat by putting tawa under the wok on gas.
