Vegetable Fried Rice is a Chinese rice recipe.This recipe is very simple and yummy rice recipe.It is a very tasty,healthy and quick recipe as almost all Chinese recipes are cooked on very high flame in wok.This recipe does not take much time to prepare.You can make this recipe within 8 to 10 minutes if you have already boiled rice.Fresh green vegetables,spices,sauces also enhance the taste of vegetable fried rice.While cooking all Chinese food I strongly advise you to use non stick wok as It would be easy to toss the rice immediately.

Ingredients of Vegetable Fried Rice.
Rice (250gm well washed and soaked)250gm
Oil 1 1/2tbsp+2tsp
Garlic 1tsp
Ginger 1/2tsp
Green chilies 2
Salt to taste
Spring onion 100gm(chopped)
Carrot 1cup(chopped)
Beans 1cup(chopped)
Capsicum 1
Cabbage 1cup(thinly sliced)
Chilly sauce 1 1/2tsp
Soya sauce 1tsp
Vinegar 2tsp
Black pepper 1/4tsp
Spring onion green part for garnish.
water 5cups for boiling the rice.
Method
Step1
Soak 1cup (well washed) of rice for half an
hour.Boil 5cups of water,add soaked rice in boiling water.Add salt and 2 tsp oil,so that it does not stick together.Stir and boil for 10-12 minutes.
Step2
Immediately after boiling the rice,strain it and cool completely.Apply oil.Keep it in refrigerator for 2 hours.Through this boiling method you will get 90% cooked rice.You may use leftover boiled rice for this yummy rice recipe.
Step3
In a wok or pan on high flame, add oil.Let the oil heat up.Further add garlic,stir for few minutes,remove the raw smell of garlic.Add ginger followed by spring onion.Saute for 1-2 minutes.Do not try to cook the vegetables.Just saute all the vegetables for few minutes.

After adding vegetables,add boiled rice,salt,black pepper,chili sauce,soya sauce,vinegar.Mix all the ingredients very well.Do not break the rice.Be careful while stirring.At last add spring onion green part for garnishing.Your vegetables fried rice is ready to serve.
