Veg Kurma


Veg Kurma is delicious and healthy recipe.There are many ways by which you can make this delicious and healthy recipe.Lots of fresh green vegetables are used in this yummy recipe and some spices are also used to enhance the taste of Veg Kurma.

Ingredients of Veg Kurma

  • Green chilies  2-3
  • Dry red chilly   3-4
  • Bay leaves 2
  • Cumin seeds 1tsp
  • cinnamon   1/2inch
  • Small cardamom 2-3
  • Big cardamom 1
  • Cloves 3-4
  • Black pepper  5-6
  • Poppy seeds 2tsp
  • Fennel seeds 1/2tsp
  • Fresh coconut 1/2
  • Onion 3chopped
  • Ginger paste 1/2tsp
  • Garlic paste 1/2tsp
  • Turmeric powder  1/4tsp
  • Red chilly powder 1/2tsp
  • Beans  1cup(Chopped)
  • Carrot 1cup(chopped)
  • Peas 1cup
  • Cauliflower 1cup(chopped)
  • Potato 1/2cup(chopped)
  • Fresh cream for garnishing
  • Fresh coriander leaves for garnishing
  • Salt to taste
  • Oil 2tbsp
  • Water
Method

Step1

In a grinder,add green chilies,dry red chilies,cloves,small cardamoms,big cardamom,fennel seeds,poppy seeds,fresh coconut,cinnamon.Griand all the hot spices and keep the griander aside,as it will be used later. 
Step2
In a pan add 1 glass of water.Add 1/2tsp salt along with fresh chopped vegetables as carrot,beans,cauliflower,potato and also add peas.
Step3
Stir all the vegetables all together and cook with lid for 7-8 minutes.Do not overcook the vegetables.After 7-8 minutes keep the boiled vegetables pan aside.
Step4
In a pan,add oil and allow the oil to heat.In hot oil add dry red chilly,bay leaves,cumin seeds.stir continuously.Add ginger and garlic paste.Stir fry for 2-3 minutes on high flame and remove the raw smell of ginger and garlic paste.After this add onion and fry till it becomes translucient.
Step5
Mix all the ingredients very well and do not forget to stir constantly.Now add salt,as per your requirement.we have already added salt while boiling the vegetables.Put red chilly powder,turmeric powder.Stir for 3-4 minutes.Add tomato and stir it for 4-5 minutes.
Step6
After stir frying all the ingredients very well.Add boiled vegetables which we boiled earlier.Mix all the ingredients very well.Add ground hot spices.
Step7
Add 1/2 cup fresh curd and you may add some water to adjust the consistency.I have not added water because leftover water of boiled vegetables  is sufficient for my Veg Kurma.
Now Veg Kurma is ready to serve.Serve with 
more fresh cream and corriander leaves.
